As our students and teachers were busy preparing for the opening of Marum, we took them aside (very quickly!) to ask them what is was like serving customers during the restaurant’s soft opening and how they think training with Marum will help them in the future.
My name is Pann Phut (male), I am 18 years old and I live in community around the Angkor temple. I have worked as a construction worker. Now I am training in the Marum restaurant, I am so happy when I meet with real customers but so afraid in the first time.
My favorite dishes are number 10 (Khmer seafood coconut rice cake with palm wine vinaigrette) and 18 (Roasted duck and pumpkin croquettes with orange and hoisin sauce). In Marum I see things that I never saw before and I can learn a lot of things from my practice. I hope I will get knowledge and skills for my future.
My name is Srey Toch (female), I am 17 years old and my home land are a little bit far from Siem Reap town. I was a scavenger at garbage dump site. When I come to train at Marum it seem different from what I expected. I am afraid but happy.
In the Marum menu I like so much number 10 (Khmer seafood coconut rice cake with palm wine vinaigrette) and 15 (Cambodian green papaya salad with crispy sun dried beef). Training in Marum I will get knowledge and skills for working and get money for support my family.
My name is Voeurng (female), this year I am 17 years old and I live near garbage dump site and I was also a scavenger. When I start to meet real customers at the first time, I am so afraid and happy.
My favorite dishes are number 21 (Barbeque pork spare ribs with fresh apple) and 24 (Kor Ko – A stew of local vegetables with river fish wontons and Marum leaves). In Marum I have chance to receive knowledge and kills for my future.
My name is Sophorn (male), I am 18 years old and live with my family near Siem Reap Town. My parents are famers. Sometime I just at home do nothing. But sometime just help my family.
When Marum opening for the real customers, I am so happy and afraid at the same time because it is the first time for me. For the Marum menu I like very much with number 23 (Siem Reap style fish Amok in Bamboo) and 26 (Tamarind scented pork rib soup with water spinach).
